The Pig’s Feet Under truck was an “oink” of an idea that came about at a food truck festival, of all places!  The lack of pork on many of these trucks drove one particular chef nuts- well, more than he usually is anyways. So, he decided to devote a truck to the animal he loves eating so dearly. Chef Co-founder, Masa Ose, draws his culinary inspirations from the melting pot that is California and from his time living in Miami, Japan, and Hong Kong.  His palette of eastern and western flavors is meshed together to co-create a pork-centric menu.
Chef Co-owner, and comrade Adriana Amezcua, was tired of the dreary, corporate restaurant scene. She decided to jump ship to partner up in a pork-o-licious adventure.  Her culinary talents stem from her Mexican-American heritage and are sassily reflected in their Pig’s Feet Under menu. Together, Adriana and Masa endeavor to showcase their trove of porky delights to every hungry pork lover.
